Charcuterie Pricing Calculator

Want it as a spreadsheet? See the workbook

To price a charcuterie board, add up what one board costs you - the cheese, meat, crackers and fruit at the price you paid plus trim and leftovers, your time to shop, build and deliver at an hourly wage, the box or board, the fridge power and a share of your monthly costs. For a grazing table, type the guests and the food for the whole table, and the price comes out per guest. Then set the price for the profit share you want to keep after card fees and the drive (40% to start).

The Charcuterie Pricing Calculator workbook on Etsy uses the same math as this page and adds:

  • A grocery list: type each pack once - the price, how much is in it and the unit - and the cost per oz or per piece is worked out for you.
  • Buy by the lb, use by the oz or g - converted for you, so a 2 lb block of cheddar can go on a board by the ounce.
  • Each board, box or table built from a recipe picked from dropdown lists, with finished examples to start from: boards, a grazing box, a grazing table per guest and charcuterie cups.
  • A one-page Quote Builder with a rush fee, a delivery and setup fee, a discount and a deposit, and an Order Tracker with profit by month.
  • Every board, box and table on one Price List: cost, wholesale, retail, fees, delivery, profit and profit per hour.

Questions

How much should I charge for a charcuterie board?

In the example, a medium board for 8 to 10 with $43.31 of food (10% trim included), 1 h 30 min of work at $20 an hour and a $6.99 box costs $81.29 and sells for $142.00 plus $15.00 delivery, keeping $57.00 after a 3% card fee and the drive.

How do I price a grazing table per guest?

Type the guests the table serves and the food, minutes and supplies for the whole table. Every cost and the price come out per guest, so a table for 80 is 80 x the price per guest.

How do I work out the cost of cheese per board?

Type the pack price, how much is in the pack and how much the board uses. An 8 oz manchego for $9.99 is about $1.25 an oz, so 6 oz costs $7.49.

Should I charge for trim and leftovers?

Yes. Rinds, ends and the extra you buy are part of what the board costs. Type the share you lose (10% = 10 oz extra for every 100); it is added to the food.

Which fees are counted?

The example starts with a 3% card fee on what the customer pays, about what card readers charge. Open "Fees and sales tax" to change it, add a platform or booking fee, or add sales tax.
